  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 lb boneless, skinless chicken breasts, cooked and shredded (about 2 cups)
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 1 (4-ounce) can diced green chiles, undrained
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper (optional, for a little heat)
  • 1/2 cup heavy cream
  • 1/2 cup Monterey Jack cheese, shredded
  • Salt and black pepper to taste
  • Optional toppings: fresh cilantro, diced avocado, sour cream, extra shredded cheese

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the shredded cooked chicken, cannellini beans, diced green chiles, chicken broth, cumin, oregano, and cayenne pepper (if using). Bring the mixture to a simmer.
  4. Reduce heat to low, cover, and let it simmer for at least 15-20 minutes to allow the flavors to meld.
  5. Stir in the heavy cream and shredded Monterey Jack cheese until the cheese is melted and the chili is creamy.
  6. Season with salt and black pepper to taste.

  • To make this recipe even quicker, use a rotisserie chicken.
