- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 lb boneless, skinless chicken breasts, cooked and shredded (about 2 cups)
- 2 (15-ounce) cans cannellini beans, rinsed and drained
- 1 (4-ounce) can diced green chiles, undrained
- 4 cups chicken broth
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper (optional, for a little heat)
- 1/2 cup heavy cream
- 1/2 cup Monterey Jack cheese, shredded
- Salt and black pepper to taste
- Optional toppings: fresh cilantro, diced avocado, sour cream, extra shredded cheese
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the shredded cooked chicken, cannellini beans, diced green chiles, chicken broth, cumin, oregano, and cayenne pepper (if using). Bring the mixture to a simmer.
- Reduce heat to low, cover, and let it simmer for at least 15-20 minutes to allow the flavors to meld.
- Stir in the heavy cream and shredded Monterey Jack cheese until the cheese is melted and the chili is creamy.
- Season with salt and black pepper to taste.
- Serve hot with your favorite toppings such as fresh cilantro, diced avocado, sour cream, or extra shredded cheese.
Notes
- To make this recipe even quicker, use a rotisserie chicken.
- For a thicker chili, you can mash some of the beans against the side of the pot with a spoon before adding the cream and cheese.
- Adjust the amount of cayenne pepper to your preferred level of spice.
