Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 1 pound pasta (penne, rotini, or your favorite shape)
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper.
  2. Add chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add pasta to the skillet. Pour in chicken broth and bring to a simmer. Cook pasta according to package directions, stirring occasionally, until al dente.
  4. Stir in minced garlic, heavy cream, and Parmesan cheese. Cook until sauce has thickened slightly, about 2-3 minutes.
  5. Return chicken to the skillet. Stir to combine.
  6. Garnish with fresh parsley and serve immediately.
