Description

Cranberry Pistachio Biscotti (Red & Green) is a truly satisfying Family Favorite. These festive biscotti are perfect for holiday gatherings or as a delightful treat any time of year.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cup shelled pistachios, roughly chopped

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the dried cranberries and chopped pistachios.
  7. Divide the dough in half. On the prepared baking sheet, shape each half into a log, about 9-10 inches long and 2 inches wide. Leave some space between the logs.
  8. Bake for 25-30 minutes, or until lightly golden and firm to the touch.
  9. Remove from oven and let cool for 10 minutes. Reduce oven temperature to 300°F (150°C).
  10. Carefully transfer the logs to a cutting board. Using a serrated knife, slice the logs diagonally into 1/2-inch thick pieces.
  11. Place the sliced biscotti back on the baking sheet, cut-side down.
  12. Bake for another 15-20 minutes, flipping halfway through, until dry and crisp.
  13. Let cool completely on a wire rack before storing in an airtight container.
