Description

This Classic Ground Beef and Potato Casserole is the ultimate comfort food! It’s hearty, flavorful, and easy to make, perfect for a weeknight dinner or a cozy weekend meal. This recipe combines tender potatoes, savory ground beef, and a creamy, cheesy sauce for a dish everyone will love.


Ingredients

  • 1.5 lbs ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups peeled and diced potatoes (about 4 medium)
  • 1 cup beef broth
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic, thyme, rosemary, salt, and pepper. Cook for another minute until fragrant.
  4. In a separate bowl, toss diced potatoes with beef broth.
  5. In a small bowl, whisk together milk and flour until smooth.
  6. Pour the potato and beef broth mixture into the skillet. Bring to a simmer.
  7. Pour in milk and flour mixture and stir until the sauce thickens.
  8. Stir in half of the shredded cheddar cheese.
  9. Transfer the mixture to a 9×13 inch baking dish.
  10. Sprinkle the remaining cheddar cheese over the top.
  11. Bake for 30-40 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  12. Let stand for a few minutes before serving.

Notes

  • For a spicier casserole, add a pinch of red pepper flakes.
  • You can substitute ground turkey or chicken for the ground beef.
  • Feel free to add other vegetables, such as carrots or peas.
