- 1.5 lbs ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups peeled and diced potatoes (about 4 medium)
- 1 cup beef broth
- 1 cup milk
- 1/2 cup shredded cheddar cheese
- 1/4 cup all-purpose flour
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic, thyme, rosemary, salt, and pepper. Cook for another minute until fragrant.
- In a separate bowl, toss diced potatoes with beef broth.
- In a small bowl, whisk together milk and flour until smooth.
- Pour the potato and beef broth mixture into the skillet. Bring to a simmer.
- Pour in milk and flour mixture and stir until the sauce thickens.
- Stir in half of the shredded cheddar cheese.
- Transfer the mixture to a 9×13 inch baking dish.
- Sprinkle the remaining cheddar cheese over the top.
- Bake for 30-40 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
- Let stand for a few minutes before serving.
Notes
- For a spicier casserole, add a pinch of red pepper flakes.
- You can substitute ground turkey or chicken for the ground beef.
