This creamy, comforting White Chicken Chili is packed with flavor and perfect for a chilly evening. It’s easy to customize and a guaranteed crowd-pleaser!

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cooked and shredded (rotisserie chicken works great!)
- 1 (15-ounce) can cannellini beans, rinsed and drained
- 1 (15-ounce) can great northern beans, rinsed and drained
- 4 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1 cup chopped green chiles (canned, mild or hot, to taste)
- 8 ounces cream cheese, softened
- Salt and pepper to taste
- Optional toppings: shredded Monterey Jack cheese, sour cream, avocado, cilantro, lime wedges
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
- Add shredded chicken, cannellini beans, great northern beans, chicken broth, cumin, chili powder, oregano, and cayenne pepper (if using). Bring to a simmer.
- Reduce heat and simmer for 15-20 minutes, or until flavors have melded.
- Stir in chopped green chiles.
- In a separate bowl, whisk together a small amount of the hot chili broth with the softened cream cheese until smooth. Then, add the cream cheese mixture to the pot, stirring until the cream cheese is fully melted and the chili is creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with your favorite toppings.
Notes
- For a thicker chili, you can mash some of the beans with a fork before adding them to the pot.
- If you want a spicier chili, add more cayenne pepper or use hot green chiles.
- This chili can be made ahead of time. Store in the refrigerator for up to 3 days or freeze for longer storage.
