- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup sliced mushrooms
- 4 green onions, chopped (separate whites and greens)
- 1 pound lo mein noodles
- Sauce:
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce (or more soy sauce for vegetarian)
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon ground white pepper
Instructions
- In a bowl, toss the chicken with soy sauce, cornstarch, and sesame oil. Marinate for 10 minutes.
- Cook the lo mein noodles according to package directions. Drain and set aside.
- In a large wok or skillet, heat vegetable oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add the garlic and white parts of the green onions to the wok and stir-fry for 30 seconds until fragrant.
- Add the bell peppers and mushrooms and stir-fry for 2-3 minutes, until slightly softened.
- In a small bowl, whisk together the sauce ingredients: soy sauce, oyster sauce (or extra soy sauce), brown sugar, rice vinegar, sesame oil, and white pepper.
- Add the cooked noodles and chicken back to the wok. Pour in the sauce and toss to combine, coating everything evenly.
- Stir-fry for 1-2 minutes until heated through and the sauce has thickened slightly.
- Garnish with the green parts of the green onions and serve immediately.
Notes
- For a spicier lo mein, add a pinch of red pepper flakes to the sauce.
- You can substitute other vegetables like broccoli, carrots, or snap peas.
- If you don’t have oyster sauce, you can use an extra tablespoon of soy sauce.
- Leftovers can be stored in the refrigerator for up to 3 days.
