Description

These Sweet Chili Chicken Thighs are a quick and easy weeknight meal, bursting with sweet, savory, and slightly spicy flavors. The chicken thighs are marinated in a homemade sweet chili sauce and then baked to tender perfection.


Ingredients

  • 6 boneless, skinless chicken thighs
  • 1/4 cup sweet chili sauce (store-bought or homemade)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • Salt and pepper to taste
  • Sesame seeds and chopped green onions, for garnish

Instructions

  1. In a bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated ginger.
  2. Place the chicken thighs in a shallow dish or resealable bag. Pour the marinade over the chicken, ensuring it’s evenly coated.
  3. Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours.
  4. Preheat the oven to 400°F (200°C).
  5. Place the marinated chicken thighs on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  7. During the last 5 minutes of baking, you can broil the chicken for a slightly caramelized finish, but watch carefully to prevent burning.
  8. Garnish with sesame seeds and chopped green onions before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the marinade.
  • Serve the chicken thighs with steamed rice and your favorite vegetables.
  • Leftover chicken can be stored in the refrigerator for up to 3 days.
