- 6 boneless, skinless chicken thighs
- 1/4 cup sweet chili sauce (store-bought or homemade)
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1/2 teaspoon grated fresh ginger
- Salt and pepper to taste
- Sesame seeds and chopped green onions, for garnish
Instructions
- In a bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated ginger.
- Place the chicken thighs in a shallow dish or resealable bag. Pour the marinade over the chicken, ensuring it’s evenly coated.
- Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours.
- Preheat the oven to 400°F (200°C).
- Place the marinated chicken thighs on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- During the last 5 minutes of baking, you can broil the chicken for a slightly caramelized finish, but watch carefully to prevent burning.
- Garnish with sesame seeds and chopped green onions before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the marinade.
- Serve the chicken thighs with steamed rice and your favorite vegetables.
- Leftover chicken can be stored in the refrigerator for up to 3 days.
