A refreshing and healthy spinach salad recipe with a simple vinaigrette dressing. Perfect for a light lunch or a side dish.

- 6 cups fresh spinach, washed and dried
- 1/2 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup toasted walnuts, chopped
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
Instructions
- In a large bowl, combine the spinach and red onion.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
- Pour the dressing over the spinach and onion, and toss gently to combine.
- Add the feta cheese and walnuts, and toss again.
- Serve immediately.
Notes
- For a sweeter salad, add a tablespoon of honey or maple syrup to the dressing.
- If you don’t have walnuts, substitute with pecans or almonds.
- Feel free to add grilled chicken or chickpeas for extra protein.
