Description

A refreshing and healthy spinach salad recipe with a simple vinaigrette dressing. Perfect for a light lunch or a side dish.


Ingredients

  • 6 cups fresh spinach, washed and dried
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted walnuts, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large bowl, combine the spinach and red onion.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the spinach and onion, and toss gently to combine.
  4. Add the feta cheese and walnuts, and toss again.
  5. Serve immediately.

Notes

  • For a sweeter salad, add a tablespoon of honey or maple syrup to the dressing.
  • If you don’t have walnuts, substitute with pecans or almonds.
  • Feel free to add grilled chicken or chickpeas for extra protein.
