- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 pound fresh spinach, washed and dried
- Salt and freshly ground black pepper to taste
- 1 tablespoon lemon juice
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds, until fragrant, being careful not to burn it.
- Add the spinach to the skillet. It will seem like a lot, but it will wilt down quickly.
- Season with salt and pepper.
- Sauté the spinach, tossing frequently, until it wilts and is tender, about 3-5 minutes.
- Remove from heat and stir in the lemon juice.
- Serve immediately.
Notes
- For a spicier kick, add a pinch of red pepper flakes when you add the garlic.
- If you’re using frozen spinach, thaw it completely and squeeze out any excess water before sautéing.
- You can also add other vegetables, such as onions or mushrooms, to this dish.
