Description

Sautéed spinach is a quick and healthy side dish that’s ready in minutes. This recipe enhances the natural flavors of the spinach with garlic and a touch of lemon.


Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 pound fresh spinach, washed and dried
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds, until fragrant, being careful not to burn it.
  3. Add the spinach to the skillet. It will seem like a lot, but it will wilt down quickly.
  4. Season with salt and pepper.
  5. Sauté the spinach, tossing frequently, until it wilts and is tender, about 3-5 minutes.
  6. Remove from heat and stir in the lemon juice.
  7. Serve immediately.

Notes

  • For a spicier kick, add a pinch of red pepper flakes when you add the garlic.
  • If you’re using frozen spinach, thaw it completely and squeeze out any excess water before sautéing.
  • You can also add other vegetables, such as onions or mushrooms, to this dish.
