  • 34 lb Beef Roast (Ribeye, Sirloin, or Chuck)
  • 2 tbsp Olive Oil
  • 4 cloves Garlic, minced
  • 2 tbsp Fresh Rosemary, chopped
  • 1 tbsp Fresh Thyme, chopped
  • 1 tsp Black Pepper, freshly ground
  • 1 tsp Sea Salt
  • 1/2 cup Beef Broth

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Pat the roast dry with paper towels. This helps achieve a good sear.
  3. In a small bowl, combine minced garlic, rosemary, thyme, salt, and pepper.
  4. Rub the herb mixture all over the roast, ensuring it’s evenly coated.
  5. Heat olive oil in a large oven-safe skillet or Dutch oven over high heat.
  6. Sear the roast on all sides until browned, about 2-3 minutes per side.
  7. Place the skillet with the roast into the preheated oven.
  8. Roast for 15 minutes, then reduce the oven temperature to 325°F (163°C).
  9. Continue roasting until the internal temperature reaches your desired doneness: 130°F (54°C) for rare, 140°F (60°C) for medium-rare, 150°F (66°C) for medium. Use a meat thermometer for accuracy.
  10. Remove the roast from the oven and transfer it to a cutting board.
  11. Pour beef broth into the skillet and deglaze, scraping up any browned bits from the bottom.
  12. Let the roast rest for at least 15-20 minutes before slicing. This allows the juices to redistribute, resulting in a more tender roast.
  13. Slice the roast against the grain and serve with the pan juices.

Notes

  • For a richer flavor, you can add a knob of butter to the skillet during the last few minutes of roasting.
  • If you don’t have fresh herbs, you can substitute with 1 teaspoon of dried rosemary and 1 teaspoon of dried thyme.
