Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 pound pasta (penne, rotini, or your favorite shape)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Season chicken with salt and pepper. Add chicken to the pot and cook until browned on all sides, about 5-7 minutes.
  3. Add minced garlic and red pepper flakes (if using) and cook for 1 minute, until fragrant.
  4. Pour in chicken broth and bring to a boil.
  5. Add pasta and cook according to package directions, stirring occasionally to prevent sticking, about 8-10 minutes.
  6. Once the pasta is cooked, stir in heavy cream and Parmesan cheese. Cook until the sauce has thickened slightly, about 2-3 minutes.
  7. Remove from heat and stir in fresh parsley.

  • For a spicier dish, add more red pepper flakes.
