- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 4 cups chicken broth
- 1 pound pasta (penne, rotini, or your favorite shape)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Season chicken with salt and pepper. Add chicken to the pot and cook until browned on all sides, about 5-7 minutes.
- Add minced garlic and red pepper flakes (if using) and cook for 1 minute, until fragrant.
- Pour in chicken broth and bring to a boil.
- Add pasta and cook according to package directions, stirring occasionally to prevent sticking, about 8-10 minutes.
- Once the pasta is cooked, stir in heavy cream and Parmesan cheese. Cook until the sauce has thickened slightly, about 2-3 minutes.
- Remove from heat and stir in fresh parsley.
- Serve immediately and enjoy!
Notes
- For a spicier dish, add more red pepper flakes.
- Feel free to add vegetables like spinach or mushrooms during the last few minutes of cooking.
- If the sauce is too thick, add a splash more chicken broth.
