  • 1 cup couscous
  • 1 1/4 cups chicken broth
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped red onion
  • 1/4 cup Kalamata olives, halved
  • 1/4 cup crumbled feta cheese
  • Lemon-Herb Dressing:
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Prepare the Chicken: In a bowl, toss the chicken pieces with olive oil, oregano, thyme, garlic powder, salt, and pepper.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, or until cooked through and slightly browned. Set aside.
  3. Cook the Couscous: In a medium saucepan, bring the chicken broth to a boil. Stir in the couscous, cover, and remove from heat. Let stand for 5 minutes, or until the liquid is absorbed. Fluff with a fork.
  4. Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, parsley, dill, minced garlic, salt, and pepper.
  5. Assemble the Bowls: In each bowl, layer the couscous, cooked chicken, cucumber, red bell pepper, red onion, and olives. Drizzle with the lemon-herb dressing and top with feta cheese.
