Description

A comforting and hearty Meatball and Mashed Potato Bake, perfect for a family dinner. This recipe combines tender meatballs, creamy mashed potatoes, and a rich tomato sauce, all baked to golden perfection.


Ingredients

  • 1.5 lbs ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg, beaten
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • 1 tsp Worcestershire sauce
  • 1/2 tsp red pepper flakes (optional)
  • 3 lbs potatoes, peeled and quartered
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, oregano, basil, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  3. Form the mixture into 1-inch meatballs.
  4. In a large skillet, heat olive oil over medium heat. Brown the meatballs on all sides. Remove from skillet and set aside.
  5. In the same skillet, add crushed tomatoes, tomato sauce, brown sugar, Worcestershire sauce, and red pepper flakes (if using). Bring to a simmer.
  6. Add the meatballs back to the sauce and cook for 10 minutes.
  7. While the meatballs are simmering, boil the potatoes in salted water until tender, about 15-20 minutes.
  8. Drain the potatoes and mash them with milk, butter, salt, and pepper until smooth.
  9. In a baking dish, spread the mashed potatoes evenly.
  10. Pour the meatball and sauce mixture over the mashed potatoes.
  11. Sprinkle with shredded cheddar cheese.
  12. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the bake is heated through.
  13. Let stand for a few minutes before serving.

Notes

  • For a spicier dish, add more red pepper flakes.
  • You can use store-bought meatballs if you’re short on time.
  • Feel free to add other vegetables to the sauce, such as chopped onions, bell peppers, or mushrooms.
  • Garnish with fresh parsley before serving.
