- 1 tablespoon olive oil
- 1 cup chopped yellow onion (about 1 medium)
- 2 cloves garlic, minced
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup grated Parmesan cheese, plus more for topping
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt, or to taste
- Pinch of nutmeg (optional)
- 1/4 cup shredded mozzarella cheese (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the thawed and squeezed dry spinach. Cook for 2-3 minutes, allowing any excess moisture to evaporate.
- Reduce heat to low. Add the softened cream cheese, sour cream, and mayonnaise. Stir until well combined and the cream cheese is mostly melted.
- Stir in 1/2 cup grated Parmesan cheese, black pepper, salt, and nutmeg (if using). Mix until smooth and creamy.
- Taste and adjust seasoning if needed.
- Sprinkle with additional Parmesan cheese and mozzarella cheese (if using) on top.
- Bake for 15-20 minutes, or until the dip is hot and bubbly and the cheese on top is melted and lightly golden.
- Serve immediately with your favorite dippers like tortilla chips, pita bread, baguette slices, or fresh vegetables.
Notes
- For a spicier kick, add a pinch of red pepper flakes along with the salt and pepper.
- If you don’t have a skillet that can go from stovetop to oven, you can transfer the mixture to a greased baking dish before adding the cheese topping and baking.
- This dip can be assembled ahead of time and refrigerated. Add a few extra minutes to the baking time if baking from chilled.
