Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Sesame seeds, for garnish (optional)
  • Chopped green onions, for garnish (optional)

Instructions

  1. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and black pepper.
  2. Place the chicken thighs in a shallow dish or resealable bag. Pour the marinade over the chicken, ensuring it’s evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  3. In a small bowl, whisk together the cornstarch and water to create a slurry. Set aside.
  4. Heat a large skillet or pan over medium-high heat. Remove the chicken from the marinade (discard the marinade).
  5. Cook the chicken thighs for 4-5 minutes per side, or until cooked through and slightly browned.
  6. Pour in the cornstarch slurry and cook, stirring constantly, until the sauce thickens and coats the chicken.
  7. Garnish with sesame seeds and chopped green onions, if desired. Serve immediately with rice and your favorite sides.
