  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the quartered potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread the potatoes in a single layer on a large baking sheet.

  6. Drizzle the remaining 1 tablespoon of olive oil over the chicken.
  7. Bake for 40-50 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the potatoes are tender and golden brown. Baste the chicken with the pan juices halfway through cooking.
