- 4 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary

Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the quartered potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread the potatoes in a single layer on a large baking sheet.
- In a small bowl, whisk together the honey, soy sauce, minced garlic, apple cider vinegar, thyme, and rosemary.
- Place the chicken thighs on the baking sheet, arranging them around the potatoes.
- Drizzle the honey garlic sauce over the chicken thighs, ensuring they are well coated.
- Drizzle the remaining 1 tablespoon of olive oil over the chicken.
- Bake for 40-50 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the potatoes are tender and golden brown. Baste the chicken with the pan juices halfway through cooking.
- Garnish with fresh parsley and serve immediately.
