This Homemade Garlic Chicken Stir Fry is a quick and easy weeknight meal, packed with flavor and ready in under 30 minutes! Tender chicken and vibrant vegetables are coated in a savory garlic sauce that’s irresistible.

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1/2 cup chicken broth
- 2 tbsp soy sauce (for sauce)
- 1 tbsp oyster sauce (optional)
- 1 tbsp brown sugar
- 1 tsp sesame oil
- Cooked rice, for serving
- Sesame seeds, for garnish (optional)
- Chopped green onions, for garnish (optional)
Instructions
- In a bowl, combine the chicken with 2 tbsp soy sauce and cornstarch. Toss to coat and let it marinate for 10 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- In the same skillet, add red bell pepper, green bell pepper, and onion and stir-fry for 3-4 minutes, until slightly softened.
- Add minced garlic and ginger and stir-fry for 30 seconds, until fragrant.
- In a small bowl, whisk together chicken broth, 2 tbsp soy sauce, oyster sauce (if using), brown sugar, and sesame oil.
- Pour the sauce into the skillet with the vegetables. Bring to a simmer and cook for 1 minute, until slightly thickened.
- Return the cooked chicken to the skillet. Toss to coat with the sauce. Cook for another 1-2 minutes, until heated through.
- Serve the stir-fry over cooked rice. Garnish with sesame seeds and chopped green onions, if desired.
Notes
- For a spicier stir-fry, add a pinch of red pepper flakes or a dash of sriracha to the sauce.
- Feel free to add other vegetables, such as broccoli florets, snow peas, or sliced carrots.
- Oyster sauce adds a depth of flavor, but you can omit it if you don’t have it.
- Leftovers can be stored in the refrigerator for up to 3 days.
