Description

Ingredients

  • 1 pound fettuccine pasta
  • 1.5 pounds chicken breast, cut into 1-inch pieces
  • 4 tablespoons butter, divided
  • 6 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook fettuccine according to package directions in salted water until al dente. Reserve 1 cup pasta water before draining.
  2. Season chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
  3. Cook chicken for 5-6 minutes until golden brown and cooked through. Remove from pan and set aside.
  4. In the same pan, melt 2 tablespoons butter. Add minced garlic and cook for 1 minute until fragrant.
  5. Add remaining butter, heavy cream, chicken broth, and Italian seasoning. Bring to a simmer.
  6. Reduce heat to medium-low and stir in Parmesan cheese until melted and sauce is smooth.
  7. Return chicken to the pan and add cooked pasta. Toss to coat evenly, adding reserved pasta water if needed to reach desired consistency.
  8. Garnish with fresh parsley and additional Parmesan if desired. Serve hot.

Notes

  • For best results, use freshly grated Parmesan cheese rather than pre-grated.
  • The sauce will thicken as it cools – use reserved pasta water to adjust consistency.
  • Store leftovers in an airtight container for up to 3 days.
  • You can substitute half-and-half for heavy cream, but the sauce won’t be as rich.
