- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 1 lb fresh green beans, trimmed
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup chicken broth
- 1 tablespoon lemon juice
- 1 teaspoon dried Italian seasoning
- Salt and freshly ground black pepper to taste
- 1 tablespoon olive oil
- Optional: fresh parsley, chopped, for garnish
Instructions
- Pat the chicken pieces dry with paper towels and season generously with salt and pepper.
- Heat olive oil in a large skillet or cast-iron pan over medium-high heat. Add the chicken in a single layer (cook in batches if necessary to avoid overcrowding) and sear for 2-3 minutes per side, until golden brown. Remove chicken from the skillet and set aside.
- Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
- Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. Stir in the Italian seasoning.
- Add the trimmed green beans to the skillet. Cover and cook for 5-7 minutes, or until the green beans are tender-crisp.
- Return the seared chicken to the skillet. Stir to coat the chicken and green beans in the garlic butter sauce. Cook for another 2-3 minutes, or until the chicken is cooked through and heated.
- Season with additional salt and pepper to taste.
- Garnish with fresh parsley, if desired, and serve immediately.
Notes
- For a spicier kick, add a pinch of red pepper flakes along with the garlic.
- If you don’t have chicken broth, you can use water or white wine.
- Feel free to add other vegetables like bell peppers or onions along with the green beans.
