  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 lb fresh green beans, trimmed
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil
  • Optional: fresh parsley, chopped, for garnish

Instructions

  1. Pat the chicken pieces dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large skillet or cast-iron pan over medium-high heat. Add the chicken in a single layer (cook in batches if necessary to avoid overcrowding) and sear for 2-3 minutes per side, until golden brown. Remove chicken from the skillet and set aside.
  3. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  4. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. Stir in the Italian seasoning.
  5. Add the trimmed green beans to the skillet. Cover and cook for 5-7 minutes, or until the green beans are tender-crisp.
  6. Return the seared chicken to the skillet. Stir to coat the chicken and green beans in the garlic butter sauce. Cook for another 2-3 minutes, or until the chicken is cooked through and heated.
  7. Season with additional salt and pepper to taste.
  8. Garnish with fresh parsley, if desired, and serve immediately.

Notes

  • For a spicier kick, add a pinch of red pepper flakes along with the garlic.
  • If you don’t have chicken broth, you can use water or white wine.
  • Feel free to add other vegetables like bell peppers or onions along with the green beans.
