Description

This classic French Onion Soup recipe is rich, flavorful, and topped with cheesy Gruyere toasts. Perfect for a cozy night in!


Ingredients

  • 3 tablespoons unsalted butter
  • 4 large yellow onions, thinly sliced
  • 1 teaspoon sugar
  • 1/2 teaspoon dried thyme
  • 1/4 cup dry red wine
  • 8 cups beef broth
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • 1 baguette, sliced into 1/2-inch thick rounds
  • 8 ounces Gruyere cheese, grated

Instructions

  1. Melt butter in a large Dutch oven or pot over medium heat. Add onions and sugar. Cook, stirring occasionally, until onions are softened and caramelized, about 30-40 minutes.
  2. Stir in thyme. Pour in red wine and cook for 2 minutes, scraping up any browned bits from the bottom of the pot.
  3. Add beef broth and bay leaf. Season with salt and pepper. Bring to a simmer, then reduce heat and cook for 20 minutes to allow flavors to meld.
  4. Preheat oven to 375°F (190°C).
  5. Place baguette slices on a baking sheet. Top each slice with a generous amount of grated Gruyere cheese.
  6. Broil the toasts in the oven for 2-3 minutes, or until cheese is melted and bubbly.
  7. Remove bay leaf from soup. Ladle soup into oven-safe bowls. Top each bowl with cheesy toast. Serve immediately.

Notes

  • For a vegetarian version, substitute vegetable broth for beef broth.
  • If you don’t have a Dutch oven, use a large, heavy-bottomed pot.
