- 3 tablespoons unsalted butter
- 4 large yellow onions, thinly sliced
- 1 teaspoon sugar
- 1/2 teaspoon dried thyme
- 1/4 cup dry red wine
- 8 cups beef broth
- 1 bay leaf
- Salt and freshly ground black pepper to taste
- 1 baguette, sliced into 1/2-inch thick rounds
- 8 ounces Gruyere cheese, grated
Instructions
- Melt butter in a large Dutch oven or pot over medium heat. Add onions and sugar. Cook, stirring occasionally, until onions are softened and caramelized, about 30-40 minutes.
- Stir in thyme. Pour in red wine and cook for 2 minutes, scraping up any browned bits from the bottom of the pot.
- Add beef broth and bay leaf. Season with salt and pepper. Bring to a simmer, then reduce heat and cook for 20 minutes to allow flavors to meld.
- Preheat oven to 375°F (190°C).
- Place baguette slices on a baking sheet. Top each slice with a generous amount of grated Gruyere cheese.
- Broil the toasts in the oven for 2-3 minutes, or until cheese is melted and bubbly.
- Remove bay leaf from soup. Ladle soup into oven-safe bowls. Top each bowl with cheesy toast. Serve immediately.
Notes
- For a vegetarian version, substitute vegetable broth for beef broth.
- If you don’t have a Dutch oven, use a large, heavy-bottomed pot.
- Adjust the amount of salt and pepper to your taste.
