- 8 large flour tortillas
- 8 ounces thinly sliced roast beef
- 8 slices provolone cheese (or Swiss cheese)
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 (1 ounce) package dry French onion soup mix
- 1 cup hot water
Instructions
- In a small bowl, whisk together the French onion soup mix and hot water. Set aside to let the soup mix rehydrate.
- In another small bowl, combine mayonnaise and Dijon mustard.
- Lay a tortilla flat. Spread a thin layer of the mayonnaise mixture over the tortilla.
- Place a few slices of roast beef and a slice of cheese on the tortilla.
- Roll up the tortilla tightly.
- Repeat steps 3-5 with the remaining tortillas, roast beef, cheese, and mayonnaise mixture.
- Slice each roll up into 1-inch pieces.
- Serve with the prepared French onion dip for dipping.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the mayonnaise mixture.
- If you don’t have time to make the au jus, you can use store-bought beef broth for dipping.
- These roll ups are best served immediately, but can be stored in the refrigerator for up to 24 hours.
