Description
This tender and juicy slow cooker French dip sandwich recipe features melt-in-your-mouth beef served on toasted rolls with melted provolone cheese. Complete with flavorful au jus for dipping, it’s the perfect comfort food meal that practically makes itself.

- 4 pounds beef chuck roast, trimmed
- 2 tablespoons olive oil
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1/2 cup soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- 8–10 French rolls, split
- 12 slices provolone cheese
- 2 tablespoons butter, softened
Instructions
- Season the chuck roast generously with salt and pepper on all sides.
- Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until well browned, about 3-4 minutes per side.
- Place the sliced onions in the bottom of the slow cooker.
- Transfer the seared roast to the slow cooker, placing it on top of the onions.
- Add minced garlic, beef broth, soy sauce, Worcestershire sauce, thyme, and bay leaf to the slow cooker.
- Cover and cook on LOW for 8-10 hours or on HIGH for 5-6 hours, until meat is very tender and easily shreds.
- Remove the meat from the slow cooker and shred with two forks, discarding any fat.
- Strain the cooking liquid, reserving it for au jus. Keep warm.
- Butter the inside of the French rolls and toast under the broiler until golden brown.
- Pile the shredded meat onto the bottom halves of the rolls, top with provolone cheese.
- Return to broiler for 1-2 minutes until cheese is melted and bubbly.
- Close sandwiches and serve hot with warm au jus for dipping.
Notes
- Choose a well-marbled chuck roast for the most flavorful results
- For extra flavor, add 1/2 cup of red wine to the cooking liquid
- Leftover meat can be frozen for up to 3 months
- The au jus can be made ahead and reheated when needed
- For crispier rolls, toast both sides under the broiler
