Description

This tender and juicy slow cooker French dip sandwich recipe features melt-in-your-mouth beef served on toasted rolls with melted provolone cheese. Complete with flavorful au jus for dipping, it’s the perfect comfort food meal that practically makes itself.


Ingredients

  • 4 pounds beef chuck roast, trimmed
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1/2 cup soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 810 French rolls, split
  • 12 slices provolone cheese
  • 2 tablespoons butter, softened

Instructions

  1. Season the chuck roast generously with salt and pepper on all sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until well browned, about 3-4 minutes per side.
  3. Place the sliced onions in the bottom of the slow cooker.
  4. Transfer the seared roast to the slow cooker, placing it on top of the onions.
  5. Add minced garlic, beef broth, soy sauce, Worcestershire sauce, thyme, and bay leaf to the slow cooker.
  6. Cover and cook on LOW for 8-10 hours or on HIGH for 5-6 hours, until meat is very tender and easily shreds.
  7. Remove the meat from the slow cooker and shred with two forks, discarding any fat.
  8. Strain the cooking liquid, reserving it for au jus. Keep warm.
  9. Butter the inside of the French rolls and toast under the broiler until golden brown.
  10. Pile the shredded meat onto the bottom halves of the rolls, top with provolone cheese.
  11. Return to broiler for 1-2 minutes until cheese is melted and bubbly.
  12. Close sandwiches and serve hot with warm au jus for dipping.

Notes

  • Choose a well-marbled chuck roast for the most flavorful results
  • For extra flavor, add 1/2 cup of red wine to the cooking liquid
  • Leftover meat can be frozen for up to 3 months
  • The au jus can be made ahead and reheated when needed
  • For crispier rolls, toast both sides under the broiler
