- 1 medium onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cups cooked chicken, shredded or diced
- 1 cup frozen peas
- 1 cup frozen corn
- 1 (10.5 oz) can cream of chicken soup
- 1 cup chicken broth
- 1/2 cup milk
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/4 tsp salt (or to taste)
- 1 (8.5 oz) package corn muffin mix
- 1/2 cup milk (for muffin mix)
- 1 large egg (for muffin mix)
- 1/2 cup shredded cheddar cheese (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes.
- Stir in the cooked chicken, frozen peas, frozen corn, cream of chicken soup, chicken broth, 1/2 cup milk, dried thyme, black pepper, and salt. Bring to a gentle simmer, then remove from heat.
- In a separate bowl, prepare the corn muffin mix according to package directions, using 1/2 cup milk and 1 large egg.
- Spoon dollops of the corn muffin batter over the chicken mixture in the skillet. If using, sprinkle the shredded cheddar cheese over the biscuit topping.
- Bake for 25-30 minutes, or until the biscuit topping is golden brown and cooked through, and the chicken mixture is bubbly.
- Let stand for 5 minutes before serving.

- For a richer flavor, use rotisserie chicken.
- Feel free to add other vegetables like diced potatoes or green beans.
