Description

This easy Chicken Cobbler recipe is pure comfort food, perfect for a cozy family meal. Layers of creamy chicken and vegetables are topped with fluffy, savory biscuits, baked until golden and bubbly.


Ingredients

  • 1 medium onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cups cooked chicken, shredded or diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/4 tsp salt (or to taste)
  • 1 (8.5 oz) package corn muffin mix
  • 1/2 cup milk (for muffin mix)
  • 1 large egg (for muffin mix)
  • 1/2 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes.
  3. Stir in the cooked chicken, frozen peas, frozen corn, cream of chicken soup, chicken broth, 1/2 cup milk, dried thyme, black pepper, and salt. Bring to a gentle simmer, then remove from heat.
  4. In a separate bowl, prepare the corn muffin mix according to package directions, using 1/2 cup milk and 1 large egg.
  5. Spoon dollops of the corn muffin batter over the chicken mixture in the skillet. If using, sprinkle the shredded cheddar cheese over the biscuit topping.
  6. Bake for 25-30 minutes, or until the biscuit topping is golden brown and cooked through, and the chicken mixture is bubbly.
  7. Let stand for 5 minutes before serving.

Notes

  • For a richer flavor, use rotisserie chicken.
  • Feel free to add other vegetables like diced potatoes or green beans.
  • You can make your own cream of chicken soup from scratch if preferred.
