- 1 lb ground beef
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup frozen peas
- 2 cups cooked egg noodles (or your preferred pasta)
Instructions
- In a large skillet or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
- Add the onion, carrots, and celery to the skillet and cook until softened, about 5-7 minutes. Add the garlic and cook for 1 minute more.
- Stir in the diced tomatoes, beef broth, tomato paste, thyme, rosemary, salt, and pepper. Bring to a simmer.
- Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the vegetables are tender and the flavors have melded.
- Stir in the frozen peas and cooked noodles. Heat through.
- Serve hot.
Notes
- Feel free to add other vegetables, such as mushrooms or bell peppers.
- You can substitute ground turkey or chicken for the ground beef.
- For a thicker sauce, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last few minutes of cooking.
