  • 1 lb ground beef
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 2 cups cooked egg noodles (or your preferred pasta)

Instructions

  1. In a large skillet or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the onion, carrots, and celery to the skillet and cook until softened, about 5-7 minutes. Add the garlic and cook for 1 minute more.
  3. Stir in the diced tomatoes, beef broth, tomato paste, thyme, rosemary, salt, and pepper. Bring to a simmer.
  4. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the vegetables are tender and the flavors have melded.
  5. Stir in the frozen peas and cooked noodles. Heat through.
  6. Serve hot.
