Description

This creamy and comforting Broccoli Cheddar Soup is a classic for a reason! It’s easy to make at home and perfect for a cozy weeknight dinner or a casual get-together. This recipe uses fresh broccoli and sharp cheddar cheese for the best flavor.


Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh broccoli florets, chopped
  • 4 cups vegetable broth (or chicken broth)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/4 cup all-purpose flour
  • 2 cups milk (or a combination of milk and heavy cream for extra richness)
  • 2 cups shredded sharp cheddar cheese, plus more for garnish
  • Optional toppings: shredded carrots, croutons, extra cheddar cheese, a swirl of cream

Instructions

  1. Melt butter in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  2. Add the chopped broccoli, vegetable broth, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer until the broccoli is tender, about 10-15 minutes.
  3. In a separate small bowl, whisk together the flour and about 1/2 cup of the broth from the soup until smooth to create a slurry.
  4. Pour the slurry into the soup pot and stir constantly until the soup thickens, about 2-3 minutes.
  5. Reduce heat to low. Gradually whisk in the milk (and/or heavy cream).
  6. Stir in the shredded cheddar cheese until melted and smooth. Taste and adjust seasonings as needed.
  7. Serve hot, garnished with extra cheddar cheese, croutons, or other desired toppings.

Notes

  • For a smoother soup, you can use an immersion blender to blend some of the soup before adding the cheese.
  • If you don’t have fresh broccoli, you can use frozen broccoli florets, but you may need to adjust the cooking time.
  • Feel free to add other vegetables to the soup, such as carrots or celery.
  • For a spicier soup, add a pinch of red pepper flakes.
