Description
This creamy and comforting Broccoli Cheddar Soup is a classic for a reason! It’s easy to make at home and perfect for a cozy weeknight dinner or a casual get-together. This recipe uses fresh broccoli and sharp cheddar cheese for the best flavor.
Ingredients
Scale
- 2 tablespoons unsalted butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh broccoli florets, chopped
- 4 cups vegetable broth (or chicken broth)
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/4 cup all-purpose flour
- 2 cups milk (or a combination of milk and heavy cream for extra richness)
- 2 cups shredded sharp cheddar cheese, plus more for garnish
- Optional toppings: shredded carrots, croutons, extra cheddar cheese, a swirl of cream
Instructions
- Melt butter in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
- Add the chopped broccoli, vegetable broth, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer until the broccoli is tender, about 10-15 minutes.
- In a separate small bowl, whisk together the flour and about 1/2 cup of the broth from the soup until smooth to create a slurry.
- Pour the slurry into the soup pot and stir constantly until the soup thickens, about 2-3 minutes.
- Reduce heat to low. Gradually whisk in the milk (and/or heavy cream).
- Stir in the shredded cheddar cheese until melted and smooth. Taste and adjust seasonings as needed.
- Serve hot, garnished with extra cheddar cheese, croutons, or other desired toppings.
Notes
- For a smoother soup, you can use an immersion blender to blend some of the soup before adding the cheese.
- If you don’t have fresh broccoli, you can use frozen broccoli florets, but you may need to adjust the cooking time.
- Feel free to add other vegetables to the soup, such as carrots or celery.
- For a spicier soup, add a pinch of red pepper flakes.
