- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 pound pasta (penne, farfalle, or your favorite)
- 1 tablespoon olive oil
- 1/2 cup butter
- 2 cloves garlic, minced
- 1/2 cup all-purpose flour
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese, plus extra for serving
- 1/4 cup chopped fresh parsley, for garnish
- Salt and black pepper to taste
Instructions
- Season chicken with salt and pepper.
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, melt butter over medium heat. Add garlic and cook for 30 seconds until fragrant.
- Whisk in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in chicken broth until smooth. Bring to a simmer.
- Stir in heavy cream and Parmesan cheese until melted and smooth.
- Return chicken to the skillet.
- Add cooked pasta to the sauce and toss to coat. Season with salt and pepper to taste.
- Garnish with fresh parsley and extra Parmesan cheese. Serve immediately.
Notes
- For a spicier dish, add a pinch of red pepper flakes to the sauce.
- You can add vegetables like broccoli or spinach to this dish. Add them during the last few minutes of cooking.
- Leftovers can be stored in the refrigerator for up to 3 days.
