- Season the chicken breasts generously on both sides with salt and pepper.
- Heat the olive oil and butter in a large skillet over medium-high heat. Once the butter is melted and foaming, add the chicken breasts. Sear for 4-6 minutes per side until golden brown and cooked through (internal temperature of 165°F/74°C). Remove chicken from the skillet and set aside on a plate, covering loosely with foil to keep warm.
- Reduce the heat to medium. Add the sliced mushrooms to the same skillet. Sauté for 5-7 minutes until they have released their moisture and started to brown.
- Add the minced garlic and thyme to the pan. Cook for about 1 minute until fragrant, being careful not to burn the garlic.
- If using wine, pour it into the skillet and scrape up any browned bits from the bottom (deglazing). Let the wine simmer and reduce by half (about 2-3 minutes). If not using wine, proceed to the next step using only the broth.
- Pour in the chicken broth and bring to a gentle simmer. Cook for 3 minutes, allowing the sauce to slightly reduce.
- Reduce the heat to low. Stir in the heavy cream and Parmesan cheese. Whisk gently until the cheese has melted and the sauce is smooth and creamy. Taste and adjust seasoning (salt and pepper) if necessary.
- Return the cooked chicken breasts to the skillet, spooning the sauce over the top. Let it simmer gently for 1-2 minutes to heat the chicken through.
- Garnish with fresh parsley before serving. Serve immediately over rice, pasta, or mashed potatoes.
