  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 pound penne pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • 1/4 cup chopped fresh parsley, plus more for garnish
  • Salt and black pepper to taste
  • 1/4 cup chicken broth

Instructions

  1. Cook the penne pasta according to package directions. Drain and set aside.
  2. Season the chicken pieces with salt and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Add the minced garlic to the skillet and cook for about 30 seconds, until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
  6. Stir in the heavy cream and Parmesan cheese. Bring to a simmer and cook for 2-3 minutes, until the sauce slightly thickens.
  7. Return the cooked chicken to the skillet.
  8. Add the cooked penne pasta to the skillet and toss to coat with the sauce.
  9. Stir in the chopped parsley. Season with additional salt and pepper to taste.
  10. Serve immediately, garnished with extra Parmesan cheese and parsley.

  • For a spicier dish, add a pinch of red pepper flakes to the sauce.
  • You can substitute the heavy cream with half-and-half for a lighter sauce.
