- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for garnish
- 1/4 cup chopped fresh parsley, plus more for garnish
- Salt and black pepper to taste
- 1/4 cup chicken broth
Instructions
- Cook the penne pasta according to package directions. Drain and set aside.
- Season the chicken pieces with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Add the minced garlic to the skillet and cook for about 30 seconds, until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in the heavy cream and Parmesan cheese. Bring to a simmer and cook for 2-3 minutes, until the sauce slightly thickens.
- Return the cooked chicken to the skillet.
- Add the cooked penne pasta to the skillet and toss to coat with the sauce.
- Stir in the chopped parsley. Season with additional salt and pepper to taste.
