Instructions
- Cook the macaroni according to package directions until al dente. Drain well and set aside.
- In a large saucepan or Dutch oven, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, until a smooth paste (roux) forms.
- Gradually whisk in the warm milk, a little at a time, ensuring no lumps form. Continue to whisk until the sauce thickens and comes to a gentle simmer, about 5-7 minutes.
- Remove the saucepan from the heat. Stir in the salt, pepper, and nutmeg (if using).
- Add the shredded cheddar, Gruyere, and Parmesan cheeses to the sauce. Stir until the cheeses are completely melted and the sauce is smooth and creamy.
- Add the cooked and drained macaroni to the cheese sauce and stir until everything is well combined.
- If desired, transfer the mac and cheese to a baking dish. In a small bowl, combine the panko breadcrumbs and melted butter. Sprinkle evenly over the top of the mac and cheese.
