For the Garlic Sauce:
- 1 cup mayonnaise
- 6 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tbsp tahini (sesame paste)
- 1/4 cup water, or as needed to thin
- Salt and pepper to taste
Instructions
- Marinate the Chicken: In a bowl, combine the sliced chicken with olive oil, cumin, coriander, turmeric, paprika, cayenne pepper (if using), garlic powder, onion powder, salt, and pepper. Mix well to ensure the chicken is evenly coated. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator for best flavor.
- Make the Garlic Sauce: In a separate bowl, whisk together the mayonnaise, minced garlic, lemon juice, and tahini. Gradually add water, a tablespoon at a time, until the sauce reaches your desired consistency. Season with salt and pepper to taste.
- Cook the Chicken: Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until cooked through and slightly browned, about 8-10 minutes. Alternatively, you can bake the chicken in a preheated oven at 375°F (190°C) for 20-25 minutes, or until cooked through.
- Assemble the Shawarma: Warm the pita bread. Fill each pita with the cooked chicken and a generous amount of garlic sauce.
- Serve: Garnish with chopped parsley and serve immediately with pickled vegetables on the side.

- For a spicier shawarma, increase the amount of cayenne pepper.
