  • 4 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 ounces pasta (penne, rotini, or your favorite)
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, brown the sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add olive oil and minced garlic to the skillet. Cook for about 30 seconds, until fragrant.
  3. Pour in the crushed tomatoes and chicken broth. Stir in the Italian seasoning and red pepper flakes (if using). Season with salt and pepper to taste.
  4. Bring the mixture to a simmer. Add the pasta and cook, stirring occasionally, until the pasta is al dente (about 8-10 minutes, depending on the pasta). Add a little extra broth if needed to keep the pasta from sticking.
  5. Reduce the heat to low. Sprinkle the mozzarella cheese and Parmesan cheese over the pasta. Cover the skillet and let the cheese melt (about 2-3 minutes).
  6. Garnish with fresh parsley and serve immediately.
