- 8 ounces pasta (penne, rotini, or your favorite)
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, brown the sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
- Add olive oil and minced garlic to the skillet. Cook for about 30 seconds, until fragrant.
- Pour in the crushed tomatoes and chicken broth. Stir in the Italian seasoning and red pepper flakes (if using). Season with salt and pepper to taste.
- Bring the mixture to a simmer. Add the pasta and cook, stirring occasionally, until the pasta is al dente (about 8-10 minutes, depending on the pasta). Add a little extra broth if needed to keep the pasta from sticking.
- Reduce the heat to low. Sprinkle the mozzarella cheese and Parmesan cheese over the pasta. Cover the skillet and let the cheese melt (about 2-3 minutes).
- Garnish with fresh parsley and serve immediately.
