Description

This flavorful White Chicken Chili is a comforting and budget-friendly meal perfect for the whole family. It’s packed with tender chicken, creamy beans, and a blend of spices that will warm you from the inside out.


Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (4 oz) can diced green chiles
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 4 cups chicken broth
  • 2 (15 oz) cans cannellini beans, rinsed and drained
  • 2 cups cooked shredded chicken
  • 1 cup frozen corn
  • 1/2 cup heavy cream or milk
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, cilantro, avocado, tortilla chips

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
  2. Stir in minced garlic, diced green chiles, cumin, oregano, chili powder, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a simmer. Add the rinsed and drained cannellini beans and cooked shredded chicken.
  4. Reduce heat to low, cover, and simmer for 15-20 minutes to allow flavors to meld.
  5. Stir in the frozen corn and heavy cream (or milk). Cook for another 5 minutes, or until heated through.
  6. Season with salt and black pepper to taste.
  7. Ladle into bowls and serve with your favorite toppings.

Notes

  • To make this chili vegetarian, omit the chicken and use vegetable broth. You can add extra beans or some diced potatoes for more substance.
  • For a quicker meal, use leftover rotisserie chicken or pre-cooked chicken breast.
  • Adjust the amount of cayenne pepper to your preferred spice level.
