- 1 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (4 oz) can diced green chiles
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper (optional, for heat)
- 4 cups chicken broth
- 2 (15 oz) cans cannellini beans, rinsed and drained
- 2 cups cooked shredded chicken
- 1 cup frozen corn
- 1/2 cup heavy cream or milk
- Salt and black pepper to taste
- Optional toppings: shredded cheese, sour cream, cilantro, avocado, tortilla chips
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
- Stir in minced garlic, diced green chiles, cumin, oregano, chili powder, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer. Add the rinsed and drained cannellini beans and cooked shredded chicken.
- Reduce heat to low, cover, and simmer for 15-20 minutes to allow flavors to meld.
- Stir in the frozen corn and heavy cream (or milk). Cook for another 5 minutes, or until heated through.
- Season with salt and black pepper to taste.
- Ladle into bowls and serve with your favorite toppings.
Notes
- To make this chili vegetarian, omit the chicken and use vegetable broth. You can add extra beans or some diced potatoes for more substance.
- For a quicker meal, use leftover rotisserie chicken or pre-cooked chicken breast.
- Adjust the amount of cayenne pepper to your preferred spice level.
