  • 2 tablespoons heavy cream
  • 1 tablespoon honey
  • Pinch of salt
  • 8 slices thick-cut bacon
  • 1/4 cup brown sugar
  • 1/4 cup water
  • 1 cup pitted dates, halved
  • Fresh thyme sprigs, for garnish (optional)

Instructions

  1. In a food processor, combine the softened goat cheese, heavy cream, honey, and salt. Process until light and fluffy, about 1-2 minutes.
  2. Cook the bacon: Preheat oven to 375°F (190°C). Place bacon on a baking sheet lined with parchment paper. Sprinkle with brown sugar and a drizzle of water. Bake for 15-20 minutes, or until bacon is crispy and caramelized.
  3. Remove bacon from oven and let cool slightly, then chop into bite-sized pieces.
  4. While the bacon is cooling, lightly toast the dates: In a small skillet over medium heat, add the halved dates. Cook for about 2-3 minutes, until slightly softened.
  5. To assemble: Spread the whipped goat cheese onto a serving platter or individual crostini. Top with candied bacon pieces and toasted dates. Garnish with fresh thyme sprigs, if desired.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the bacon before baking.
  • If you don’t have a food processor, you can whip the goat cheese by hand with a whisk, though it may take a bit longer.
