Description

This bubbly warm spinach bacon dip is a crowd-pleasing appetizer that’s perfect for any gathering. It’s incredibly easy to make and features a creamy, cheesy base loaded with savory bacon and tender spinach.


Ingredients

  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup shredded Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 slices bacon, cooked and crumbled
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the thawed and squeezed spinach, mayonnaise, sour cream, chopped onion, and minced garlic. Stir well.
  3. Add the softened cream cheese, Parmesan cheese, black pepper, and red pepper flakes (if using) to the spinach mixture. Beat with a mixer until smooth and well combined.
  4. Stir in most of the crumbled bacon, reserving some for topping.
  5. Spread the mixture evenly into a greased 8×8 inch baking dish or a small oven-safe skillet.
  6. Top with the shredded Monterey Jack cheese and the reserved crumbled bacon.
  7. Bake for 20-25 minutes, or until the dip is heated through and bubbly, and the cheese is melted and lightly golden.
  8. Serve hot with tortilla chips, crackers, or bread.

Notes

  • For an extra rich dip, you can add a splash of heavy cream to the mixture.
  • If you don’t have fresh garlic, you can use 1/2 teaspoon of garlic powder.
  • This dip can be assembled ahead of time and refrigerated. Add a few extra minutes to the baking time if baking from chilled.
