This bubbly warm spinach bacon dip is a crowd-pleasing appetizer that’s perfect for any gathering. It’s incredibly easy to make and features a creamy, cheesy base loaded with savory bacon and tender spinach.

- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup shredded Parmesan cheese
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 8 slices bacon, cooked and crumbled
- 1/2 cup shredded Monterey Jack cheese
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the thawed and squeezed spinach, mayonnaise, sour cream, chopped onion, and minced garlic. Stir well.
- Add the softened cream cheese, Parmesan cheese, black pepper, and red pepper flakes (if using) to the spinach mixture. Beat with a mixer until smooth and well combined.
- Stir in most of the crumbled bacon, reserving some for topping.
- Spread the mixture evenly into a greased 8×8 inch baking dish or a small oven-safe skillet.
- Top with the shredded Monterey Jack cheese and the reserved crumbled bacon.
- Bake for 20-25 minutes, or until the dip is heated through and bubbly, and the cheese is melted and lightly golden.
- Serve hot with tortilla chips, crackers, or bread.
Notes
- For an extra rich dip, you can add a splash of heavy cream to the mixture.
- If you don’t have fresh garlic, you can use 1/2 teaspoon of garlic powder.
- This dip can be assembled ahead of time and refrigerated. Add a few extra minutes to the baking time if baking from chilled.
