- 1½ lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- ½ cup sun-dried tomatoes, packed in oil, drained and chopped
- 1½ cups chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 4 cups fresh spinach
- Salt and freshly ground black pepper to taste
- Fresh basil or parsley, chopped, for garnish (optional)
Instructions
- Season the chicken pieces with salt and pepper.
- Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Add the minced garlic and chopped sun-dried tomatoes, and cook for another minute until fragrant.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Reduce the heat to medium-low.
- Stir in the heavy cream and Parmesan cheese. Continue to simmer gently for 5-7 minutes, or until the sauce thickens slightly.
- Return the cooked chicken to the skillet. Add the fresh spinach and cook until wilted, about 2-3 minutes.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve immediately, garnished with fresh basil or parsley if desired.
Notes
- For a spicier kick, add a pinch of red pepper flakes with the garlic.
- This dish pairs wonderfully with pasta, rice, mashed potatoes, or crusty bread to soak up the delicious sauce.
