Description

This Tuscan Chicken in Sun-Dried Tomato Cream Sauce recipe delivers a rich and satisfying meal that’s surprisingly easy to make. 


Ingredients

  • lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1½ cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley, chopped, for garnish (optional)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Add the minced garlic and chopped sun-dried tomatoes, and cook for another minute until fragrant.
  4. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Reduce the heat to medium-low.
  5. Stir in the heavy cream and Parmesan cheese. Continue to simmer gently for 5-7 minutes, or until the sauce thickens slightly.
  6. Return the cooked chicken to the skillet. Add the fresh spinach and cook until wilted, about 2-3 minutes.
  7. Taste and adjust seasoning with salt and pepper as needed.
  8. Serve immediately, garnished with fresh basil or parsley if desired.

Notes

  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
  • This dish pairs wonderfully with pasta, rice, mashed potatoes, or crusty bread to soak up the delicious sauce.
