Description

This comforting Tortellini Spinach Soup is a quick and easy weeknight meal. Filled with cheesy tortellini, fresh spinach, and a flavorful broth, it’s a perfect blend of warmth and taste.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 5 ounces fresh spinach
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  2. Pour in vegetable broth and bring to a simmer.
  3. Add tortellini to the simmering broth and cook according to package directions, usually about 6-8 minutes, or until the tortellini is cooked through.
  4. Stir in the spinach and cook until wilted, about 1-2 minutes.
  5. Remove from heat and stir in Parmesan cheese. Season with salt and pepper to taste.
  6. Serve hot, garnished with additional Parmesan cheese if desired.
