- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 (9 ounce) package refrigerated cheese tortellini
- 5 ounces fresh spinach
- 1/2 cup grated Parmesan cheese, plus more for garnish
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
- Pour in vegetable broth and bring to a simmer.
- Add tortellini to the simmering broth and cook according to package directions, usually about 6-8 minutes, or until the tortellini is cooked through.
- Stir in the spinach and cook until wilted, about 1-2 minutes.
- Remove from heat and stir in Parmesan cheese. Season with salt and pepper to taste.
- Serve hot, garnished with additional Parmesan cheese if desired.
