Description

Tender and flavorful Teriyaki Chicken Thighs, cooked to perfection in a homemade teriyaki sauce. This recipe is easy to follow and delivers a delicious weeknight meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 2 tablespoons sake (or dry sherry)
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons vegetable oil (for cooking)
  • Sesame seeds and chopped green onions, for garnish (optional)

Instructions

  1. In a bowl, whisk together soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger.
  2. In a small bowl, whisk together cornstarch and water to create a slurry.
  3. Place chicken thighs in a large ziplock bag or a bowl. Pour the teriyaki marinade over the chicken, ensuring all pieces are coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  4. Heat vegetable oil in a large skillet or pan over medium-high heat.
  5. Remove chicken from the marinade (discard the marinade). Cook the chicken thighs for about 5-7 minutes per side, or until cooked through and slightly caramelized.
  6. Pour the remaining marinade into the skillet. Bring to a simmer.
  7. Add the cornstarch slurry to the sauce and cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
  8. Return the chicken to the skillet, and coat with the thickened teriyaki sauce. Cook for another minute or two to heat through.
  9. Garnish with sesame seeds and chopped green onions, if desired. Serve immediately with rice and your favorite sides.

Notes

  • For a thicker sauce, add a bit more cornstarch slurry.
  • If you’re short on time, you can skip the marinating step, but the flavor will be more intense with marinating.
  • Serve with steamed rice, broccoli, or your favorite vegetables.
