Description
Tender and flavorful Teriyaki Chicken Thighs, cooked to perfection in a homemade teriyaki sauce. This recipe is easy to follow and delivers a delicious weeknight meal.

- 1.5 lbs boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/4 cup mirin
- 2 tablespoons sake (or dry sherry)
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 tablespoon water
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 tablespoons vegetable oil (for cooking)
- Sesame seeds and chopped green onions, for garnish (optional)
Instructions
- In a bowl, whisk together soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger.
- In a small bowl, whisk together cornstarch and water to create a slurry.
- Place chicken thighs in a large ziplock bag or a bowl. Pour the teriyaki marinade over the chicken, ensuring all pieces are coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Heat vegetable oil in a large skillet or pan over medium-high heat.
- Remove chicken from the marinade (discard the marinade). Cook the chicken thighs for about 5-7 minutes per side, or until cooked through and slightly caramelized.
- Pour the remaining marinade into the skillet. Bring to a simmer.
- Add the cornstarch slurry to the sauce and cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
- Return the chicken to the skillet, and coat with the thickened teriyaki sauce. Cook for another minute or two to heat through.
- Garnish with sesame seeds and chopped green onions, if desired. Serve immediately with rice and your favorite sides.
Notes
- For a thicker sauce, add a bit more cornstarch slurry.
- If you’re short on time, you can skip the marinating step, but the flavor will be more intense with marinating.
- Serve with steamed rice, broccoli, or your favorite vegetables.
