  • 6 boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup water
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon black pepper
  • Cooked rice, for serving
  • Steamed broccoli, for serving

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken thighs for 4-5 minutes per side, until golden brown. Remove from skillet and set aside.
  4. Reduce heat to medium. Add minced garlic to the skillet and cook for 30 seconds, until fragrant.
  5. In a small bowl, whisk together soy sauce, honey, water, rice vinegar, cornstarch, and black pepper.
  6. Pour sauce into the skillet and bring to a simmer, stirring constantly.
  7. Return chicken thighs to the skillet. Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through and sauce has thickened.
  8. Serve chicken and sauce over cooked rice with a side of steamed broccoli.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the sauce.
  • If you don’t have rice vinegar, you can substitute with apple cider vinegar.
