  • 4 large artichokes
  • 1/2 cup olive oil, divided
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste
  • 1/2 cup water

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the artichokes: Rinse artichokes and trim the stem. Cut off the top inch of the artichoke and snip off the thorny tips of the leaves. Open the leaves slightly.
  3. Make the filling: In a bowl, combine breadcrumbs, Parmesan cheese, minced garlic, parsley, basil, salt, and pepper. Mix well.
  4. Stuff the artichokes: Drizzle a little olive oil between the leaves of each artichoke. Spoon the breadcrumb mixture between the leaves, packing it in as much as possible.
  5. Place the stuffed artichokes in a baking dish. Pour 1/2 cup of water into the bottom of the dish and drizzle the remaining olive oil over the artichokes.
  6. Bake: Cover the dish with foil and bake for 60 minutes. Remove the foil and bake for another 15-20 minutes, or until the artichokes are tender and the filling is golden brown.
  7. Serve: Let the artichokes cool slightly before serving. Enjoy!

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the filling.
  • You can use dried herbs instead of fresh, but reduce the amount to about 1 tablespoon total.
