- 4 large artichokes
- 1/2 cup olive oil, divided
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- Salt and pepper to taste
- 1/2 cup water
Instructions
- Preheat oven to 375°F (190°C).
- Prepare the artichokes: Rinse artichokes and trim the stem. Cut off the top inch of the artichoke and snip off the thorny tips of the leaves. Open the leaves slightly.
- Make the filling: In a bowl, combine breadcrumbs, Parmesan cheese, minced garlic, parsley, basil, salt, and pepper. Mix well.
- Stuff the artichokes: Drizzle a little olive oil between the leaves of each artichoke. Spoon the breadcrumb mixture between the leaves, packing it in as much as possible.
- Place the stuffed artichokes in a baking dish. Pour 1/2 cup of water into the bottom of the dish and drizzle the remaining olive oil over the artichokes.
- Bake: Cover the dish with foil and bake for 60 minutes. Remove the foil and bake for another 15-20 minutes, or until the artichokes are tender and the filling is golden brown.
- Serve: Let the artichokes cool slightly before serving. Enjoy!
Notes
- For a spicier kick, add a pinch of red pepper flakes to the filling.
- You can use dried herbs instead of fresh, but reduce the amount to about 1 tablespoon total.
- Serve with a lemon wedge for squeezing over the artichokes.
