- 4 large artichokes
- 1/2 cup olive oil, plus extra for drizzling
- 1 cup Italian breadcrumbs
- 1/2 cup grated Pecorino Romano cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 1/2 cup water
- Lemon wedges, for serving
Instructions
- Preheat oven to 375°F (190°C).
- Prepare the artichokes: Rinse the artichokes and trim the stems. Cut off the top inch of the artichokes and snip off the thorny tips of the leaves with kitchen shears. Spread the leaves open.
- Make the stuffing: In a bowl, combine breadcrumbs, Pecorino Romano cheese, parsley, minced garlic, red pepper flakes (if using), salt, and pepper.
- Stuff the artichokes: Drizzle a little olive oil between the leaves of each artichoke. Spoon the breadcrumb mixture into each artichoke, pressing it in between the leaves.
- Arrange the artichokes: Place the stuffed artichokes in a baking dish. Pour 1/2 cup of water into the bottom of the dish and drizzle the artichokes with remaining olive oil.
- Bake the artichokes: Bake for 60-75 minutes, or until the artichokes are tender and the breadcrumbs are golden brown. Check for doneness by pulling a leaf; it should come off easily. If the breadcrumbs start to brown too quickly, you can cover the dish loosely with foil.
- Serve: Serve hot, with lemon wedges for squeezing over the artichokes.
Notes
- For a richer flavor, you can add some grated Parmesan cheese to the breadcrumb mixture.
- If you don’t have Pecorino Romano cheese, you can substitute with Parmesan cheese.
- Leftover stuffed artichokes can be stored in the refrigerator for up to 3 days. Reheat in the oven or microwave.
