- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1/2 cup soy sauce
- 1/4 cup honey
- 4 cloves garlic, minced
- 1 tablespoon cornstarch
- 1/4 cup water
- 8 ounces egg noodles
- 2 green onions, sliced (for garnish)
- Sesame seeds, for garnish (optional)
Instructions
- Cook the noodles according to package directions. Drain and set aside.
- In a large skillet or wok, heat the olive oil over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes.
- Add the red bell pepper and cook for another 2-3 minutes, until slightly softened.
- In a small bowl, whisk together the soy sauce, honey, and minced garlic.
- In a separate small bowl, whisk together the cornstarch and water to create a slurry.
- Pour the soy sauce mixture into the skillet with the chicken and peppers. Bring to a simmer.
- Add the cornstarch slurry and cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
- Add the cooked noodles to the skillet and toss to coat.
- Garnish with sliced green onions and sesame seeds (if using). Serve immediately.
Notes
- For a spicier dish, add a pinch of red pepper flakes to the sauce.
- You can substitute chicken thighs for chicken breasts.
- Leftovers can be stored in the refrigerator for up to 3 days.
