Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 8 ounces egg noodles
  • 2 green onions, sliced (for garnish)
  • Sesame seeds, for garnish (optional)

Instructions

  1. Cook the noodles according to package directions. Drain and set aside.
  2. In a large skillet or wok, heat the olive oil over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes.
  3. Add the red bell pepper and cook for another 2-3 minutes, until slightly softened.
  4. In a small bowl, whisk together the soy sauce, honey, and minced garlic.
  5. In a separate small bowl, whisk together the cornstarch and water to create a slurry.
  6. Pour the soy sauce mixture into the skillet with the chicken and peppers. Bring to a simmer.
  7. Add the cornstarch slurry and cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
  8. Add the cooked noodles to the skillet and toss to coat.
  9. Garnish with sliced green onions and sesame seeds (if using). Serve immediately.

Notes

  • For a spicier dish, add a pinch of red pepper flakes to the sauce.
  • You can substitute chicken thighs for chicken breasts.
