- Prepare the Steak: Season the steak generously with salt and pepper. Heat a tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat until shimmering. Sear the steak for 3-4 minutes per side for medium-rare, or longer depending on desired doneness.
- Rest the Steak: Transfer the steak to a cutting board and let it rest for at least 10 minutes before slicing. This allows the juices to redistribute, resulting in a more tender steak.
- Cook the Pasta: While the steak rests, cook the pasta according to package directions in a large pot of salted boiling water until al dente. Reserve about 1 cup of pasta water before draining.
- Make the Garlic Butter Sauce: In the same skillet used for the steak (wipe out excess oil if needed), melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant but not browned.
- Deglaze and Add Cream (optional): If using, pour in the red wine and let it simmer for a minute, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream, if using.
- Combine Pasta and Sauce: Add the cooked pasta to the skillet with the garlic butter sauce. Toss to coat. If the sauce seems too thick, add a little of the reserved pasta water to reach your desired consistency.
- Add Parmesan and Steak: Stir in the Parmesan cheese. Slice the rested steak against the grain and add it to the pasta. Toss gently to combine.
- Serve: Garnish with fresh parsley and extra Parmesan cheese. Serve immediately.
