Description
A classic Greek spinach pie, or spanakopita, made from scratch with a flaky phyllo crust and a flavorful spinach and feta filling. This recipe is perfect for a comforting meal or a crowd-pleasing appetizer.

- 1 pound fresh spinach, thoroughly washed and chopped
- 1/2 cup olive oil, plus more for brushing phyllo
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1/2 cup chopped fresh dill
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 1 cup crumbled feta cheese
- 1/2 cup ricotta cheese
- 4 large eggs, lightly beaten
- 1/4 teaspoon freshly grated nutmeg
- Salt and freshly ground black pepper to taste
- 1 pound phyllo dough, thawed
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more, until fragrant.
- Add the spinach to the skillet and cook until wilted, about 3-5 minutes. Remove from heat and let cool.
- In a large bowl, combine the cooled spinach mixture, dill, parsley, green onions, feta cheese, ricotta cheese, eggs, and nutmeg. Season with salt and pepper to taste.
- Lightly brush a 9×13 inch baking dish with olive oil.
- Lay one sheet of phyllo dough in the dish and brush with olive oil. Repeat with 5 more sheets, brushing each with olive oil.
- Spread the spinach filling evenly over the phyllo.
- Top the filling with remaining phyllo sheets, brushing each sheet with olive oil.
- Using a sharp knife, score the top layer of phyllo into squares or diamonds.
- Bake for 45-55 minutes, or until the top is golden brown and the filling is set.
- Let cool for 10 minutes before slicing and serving.
Notes
- For a richer flavor, you can add a pinch of red pepper flakes to the filling.
- Make sure to keep the phyllo dough covered with a damp towel while working with it to prevent it from drying out.
- Spanakopita can be made ahead of time and reheated.
