Description

A classic Greek spinach pie, or spanakopita, made from scratch with a flaky phyllo crust and a flavorful spinach and feta filling. This recipe is perfect for a comforting meal or a crowd-pleasing appetizer.


Ingredients

  • 1 pound fresh spinach, thoroughly washed and chopped
  • 1/2 cup olive oil, plus more for brushing phyllo
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 1 cup crumbled feta cheese
  • 1/2 cup ricotta cheese
  • 4 large eggs, lightly beaten
  • 1/4 teaspoon freshly grated nutmeg
  • Salt and freshly ground black pepper to taste
  • 1 pound phyllo dough, thawed

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more, until fragrant.
  3. Add the spinach to the skillet and cook until wilted, about 3-5 minutes. Remove from heat and let cool.
  4. In a large bowl, combine the cooled spinach mixture, dill, parsley, green onions, feta cheese, ricotta cheese, eggs, and nutmeg. Season with salt and pepper to taste.
  5. Lightly brush a 9×13 inch baking dish with olive oil.
  6. Lay one sheet of phyllo dough in the dish and brush with olive oil. Repeat with 5 more sheets, brushing each with olive oil.
  7. Spread the spinach filling evenly over the phyllo.
  8. Top the filling with remaining phyllo sheets, brushing each sheet with olive oil.
  9. Using a sharp knife, score the top layer of phyllo into squares or diamonds.
  10. Bake for 45-55 minutes, or until the top is golden brown and the filling is set.
  11. Let cool for 10 minutes before slicing and serving.

Notes

  • For a richer flavor, you can add a pinch of red pepper flakes to the filling.
  • Make sure to keep the phyllo dough covered with a damp towel while working with it to prevent it from drying out.
  • Spanakopita can be made ahead of time and reheated.
