- 1 lb boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (or to taste)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon garlic powder
- 1/4 cup chopped green onions, for garnish
- 1 tablespoon sesame seeds, for garnish
Instructions
- Season the chicken breasts or thighs with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side, or until fully cooked through and golden brown.
- Remove the chicken from the skillet and let it rest for a few minutes. Once slightly cooled, shred or dice the chicken into bite-sized pieces.
- In a medium bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, sesame oil, and garlic powder until smooth.
- Add the shredded or diced chicken to the sauce and toss to coat evenly.
- Serve immediately over rice, noodles, or a bed of lettuce. Garnish with chopped green onions and sesame seeds.
Notes
- For extra spice, add more sriracha to the sauce.
- You can also bake or grill the chicken instead of pan-frying.
- This dish is great served with steamed broccoli or a simple side salad.
