  • 1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1 cup frozen peas
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons cold water (optional, for thickening)

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until lightly browned on all sides. Remove the chicken and set aside.
  2. Add the chopped onion, carrots, and celery to the same skillet. Cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Transfer the browned chicken and sautéed vegetables to the slow cooker.
  4. Stir in the diced tomatoes (undrained), chicken broth, dried thyme, dried rosemary, and black pepper. Season with salt to taste.
  5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and the vegetables are cooked through.
  6. About 30 minutes before serving, stir in the frozen peas.
  7. If you prefer a thicker stew, in a small bowl, whisk together the cornstarch and cold water until smooth. Stir this mixture into the slow cooker. Continue to cook until the stew has thickened to your desired consistency.
  8. Serve hot and enjoy!

Notes

  • For extra flavor, you can add a bay leaf to the slow cooker along with the other seasonings, and remove it before serving.
  • Feel free to add other vegetables like potatoes (cut into 1-inch cubes) or mushrooms. Add potatoes at the beginning of cooking, and mushrooms during the last hour.
  • This stew freezes well. Store leftovers in an airtight container in the freezer for up to 3 months.
