- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup fresh or frozen cranberries
- 1/2 cup chicken broth
- 1/4 cup orange juice
- 1 tbsp honey
- 1 tsp orange zest
- 1 tbsp cornstarch
- 2 tbsp cold water
- Chopped fresh parsley, for garnish (optional)
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs for about 3-4 minutes per side, until browned. Remove chicken from skillet and set aside.
- Melt butter in the same skillet. Add diced onion and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute more, until fragrant.
- Add cranberries, chicken broth, orange juice, honey, and orange zest to the skillet. Bring to a simmer.
- In a small bowl, whisk together cornstarch and cold water to create a slurry.
- Return the chicken to the skillet. Pour the cornstarch slurry into the sauce and stir to thicken.
- Simmer for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened.
- Garnish with fresh parsley, if desired. Serve immediately.

- For a spicier dish, add a pinch of red pepper flakes.
