Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup fresh or frozen cranberries
  • 1/2 cup chicken broth
  • 1/4 cup orange juice
  • 1 tbsp honey
  • 1 tsp orange zest
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs for about 3-4 minutes per side, until browned. Remove chicken from skillet and set aside.
  3. Melt butter in the same skillet. Add diced onion and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute more, until fragrant.
  4. Add cranberries, chicken broth, orange juice, honey, and orange zest to the skillet. Bring to a simmer.
  5. In a small bowl, whisk together cornstarch and cold water to create a slurry.
  6. Return the chicken to the skillet. Pour the cornstarch slurry into the sauce and stir to thicken.
  7. Simmer for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened.
  8. Garnish with fresh parsley, if desired. Serve immediately.
