Description

Sicilian Stuffed Artichokes are a flavorful and satisfying dish, perfect as a starter or a light meal. These artichokes are filled with a savory mixture of breadcrumbs, herbs, cheese, and garlic, then baked until tender and golden.

  • 4 large artichokes
  • 1 cup breadcrumbs (Italian seasoned preferred)
  • 1/2 cup grated Pecorino Romano cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/4 cup olive oil, plus more for drizzling
  • Salt and pepper to taste
  • 1/4 cup water or vegetable broth
  • Lemon wedges (for serving, optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the artichokes: Rinse artichokes and trim the stems flush with the base. Remove any tough outer leaves. Open up the leaves slightly to create space for the filling.
  3. Make the filling: In a bowl, combine breadcrumbs, Pecorino Romano cheese, parsley, minced garlic, olive oil, salt, and pepper. Mix well.
  4. Stuff the artichokes: Gently spoon the breadcrumb mixture into each artichoke, working it between the leaves.
  5. Arrange and bake: Place the stuffed artichokes in a baking dish. Pour water or vegetable broth into the bottom of the dish. Drizzle the artichokes with a little olive oil.
  6. Bake: Bake for 60-75 minutes, or until the artichokes are tender and the filling is golden brown. You can test for doneness by gently pulling on a leaf; it should come off easily.
  7. Serve: Let the artichokes cool slightly. Serve warm, with lemon wedges, if desired.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the filling.
  • You can add other cheeses to the filling, such as Parmesan or a blend of Italian cheeses.
  • If the artichokes start to brown too quickly, you can loosely tent them with foil during the last part of the baking time.
