Description

Ingredients

  • 1 pound Italian sausage, sweet or hot, removed from casings
  • 2 large bell peppers (any color), sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine the sliced bell peppers and onion.
  3. Drizzle with olive oil, oregano, basil, garlic powder, red pepper flakes (if using), salt, and pepper. Toss to coat evenly.
  4. Spread the vegetables in a single layer on a large sheet pan.
  5. Crumble the sausage over the vegetables.
  6. Bake for 20-25 minutes, or until the sausage is cooked through and the vegetables are tender, flipping the sausage and vegetables halfway through.
  7. Serve immediately.
