- 1 pound Italian sausage, sweet or hot, removed from casings
- 2 large bell peppers (any color), sliced
- 1 large onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine the sliced bell peppers and onion.
- Drizzle with olive oil, oregano, basil, garlic powder, red pepper flakes (if using), salt, and pepper. Toss to coat evenly.
- Spread the vegetables in a single layer on a large sheet pan.
- Crumble the sausage over the vegetables.
- Bake for 20-25 minutes, or until the sausage is cooked through and the vegetables are tender, flipping the sausage and vegetables halfway through.
- Serve immediately.
