- 1 pound Italian sausage, removed from casings
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 1 pound gnocchi (fresh or dried)
- 1 cup chopped fresh spinach (optional)
- Grated Parmesan cheese, for serving
Instructions
- In a large pot or Dutch oven, brown the sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
- Add the olive oil, onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5-7 minutes.
- Stir in the garlic and cook for 1 minute more, until fragrant.
- Pour in the chicken broth and diced tomatoes. Season with oregano, basil, salt, and pepper. Bring to a boil.
- Add the gnocchi to the boiling soup. Cook according to package directions, usually 2-3 minutes for fresh gnocchi or 5-7 minutes for dried.
- If using, stir in the spinach during the last minute of cooking until wilted.
- Taste and adjust seasonings as needed.
- Serve hot, garnished with grated Parmesan cheese.
