Ingredients

  • 1 pound Italian sausage, removed from casings
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1 pound gnocchi (fresh or dried)
  • 1 cup chopped fresh spinach (optional)
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot or Dutch oven, brown the sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add the olive oil, onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5-7 minutes.
  3. Stir in the garlic and cook for 1 minute more, until fragrant.
  4. Pour in the chicken broth and diced tomatoes. Season with oregano, basil, salt, and pepper. Bring to a boil.
  5. Add the gnocchi to the boiling soup. Cook according to package directions, usually 2-3 minutes for fresh gnocchi or 5-7 minutes for dried.
  6. If using, stir in the spinach during the last minute of cooking until wilted.
  7. Taste and adjust seasonings as needed.
  8. Serve hot, garnished with grated Parmesan cheese.
