Description

This Quick Sticky Chicken Noodle Bowl is a weeknight winner! Tender chicken and noodles are coated in a sweet and savory sauce, ready in under 30 minutes. Perfect for busy families!


Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, thinly sliced
  • 1 cup sliced mushrooms
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • 8 ounces dried egg noodles
  • 2 green onions, sliced, for garnish
  • Sesame seeds, for garnish (optional)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Season the chicken with salt and pepper. Add the chicken to the skillet and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Add the red bell pepper and mushrooms to the skillet and cook for 3-4 minutes, until slightly softened. Add the minced garlic and cook for 30 seconds, until fragrant.
  4. In a small bowl, whisk together the soy sauce, honey, rice vinegar, cornstarch, and water.
  5. Add the sauce to the skillet and bring to a simmer, stirring constantly, until the sauce thickens, about 1-2 minutes.
  6. Add the cooked chicken back to the skillet and toss to coat in the sauce.
  7. Meanwhile, cook the egg noodles according to package directions. Drain the noodles.
  8. Add the cooked noodles to the skillet and toss to combine with the chicken and sauce.
  9. Serve immediately, garnished with sliced green onions and sesame seeds (if using).

Notes

  • For a spicier dish, add a pinch of red pepper flakes to the sauce.
  • Feel free to add other vegetables, such as broccoli florets or snap peas.
  • You can substitute chicken thighs for chicken breasts. Just adjust the cooking time as needed.
