- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, thinly sliced
- 1 cup sliced mushrooms
- 4 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch
- 1/4 cup water
- 8 ounces dried egg noodles
- 2 green onions, sliced, for garnish
- Sesame seeds, for garnish (optional)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Season the chicken with salt and pepper. Add the chicken to the skillet and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Add the red bell pepper and mushrooms to the skillet and cook for 3-4 minutes, until slightly softened. Add the minced garlic and cook for 30 seconds, until fragrant.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, cornstarch, and water.
- Add the sauce to the skillet and bring to a simmer, stirring constantly, until the sauce thickens, about 1-2 minutes.
- Add the cooked chicken back to the skillet and toss to coat in the sauce.
- Meanwhile, cook the egg noodles according to package directions. Drain the noodles.
- Add the cooked noodles to the skillet and toss to combine with the chicken and sauce.
- Serve immediately, garnished with sliced green onions and sesame seeds (if using).
Notes
- For a spicier dish, add a pinch of red pepper flakes to the sauce.
- Feel free to add other vegetables, such as broccoli florets or snap peas.
- You can substitute chicken thighs for chicken breasts. Just adjust the cooking time as needed.
